Poughkeepsie may not exactly be known for its Tex-Mex cuisine, but as with any city worth its margarita salt, if you are willing to search a little bit you just might strike gold. Well, put that bag of nachos back into your apartment's kitchen cupboard, and turn 'Salsa's Greatest Hits' down on the stereo. It's time to make that short drive from your apartment to the Coyote Grill, Poughkeepsie's destination for authentic Tex-Mex and a lot more. Far from your typical run-of-the-mill chain restaurant, this independently owned establishment is classy yet laid back, perfect for casual dates and family nights out. Fajitas, tacos and burritos are all, of course, offered in head-spinning portions, topped with onions, peppers, salsa verde and the requisite guacamole, all sided with a hearty spooning of black beans and rice. Surprising and eclectic dishes such as ginger crusted salmon, jambalaya pasta and even rack of lamb will shatter any pre-conceived notions of the Coyote however, with customers hungry for filet mignon or simply dying for some chicken strips both smiling with satisfaction at neighboring booths. The décor leans towards a more modern sheen than your typical cabana Tex-Mex joint, with a long and busy polished bar greeting guests upon entry. Martini's are a specialty, featuring hand-rolled olives and house concoctions (try the peach-tini!), and the sides are truly inspired, running the gamut from candied garlic mashed potatoes to fried plantains.
