Food On A Budget-Ready-Made Tacos

We've all been there. The month is more than halfway done. Payday is several days away. Some bills are paid, but you're running out of cash and you are making sure to have enough for rent at the first of the next month. So you're on a budget, but you really want to eat out and have something great.

Well guess what? You can still eat great on a budget and save some of that money for your rent and bills, etc. Just make sure that come the 1st, you get that rent in.

It may take discipline, but a mysterious, wise wizard once told me of a recipe that is the secret to saving money on food. His recipe costs all of about 9 bucks and can last a week or two if you need it to.

Follow this recipe and you are on your way to happiness and saving some cash.

Purchase yourself a package of 48 tortillas. You can go cheap if you want. Then you need to get three of four cans of re-fried beans, a block of cheese, a jar of salsa, and if you like sour cream...some sour cream. All in all this should not cost you more than 9 or 10 bucks if you are shopping right.

Cooking for one? Here's how to prepare it:

  1. Warm 3 or four tortillas at a low temperature in the oven. Don't let them get crisp, just warm.
  2. Cook about 1/3 a can of beans in the microwave or on the stove. Cover the other half and store in the fridge for later use. Spread the cooked beans over warm tortillas.
  3. Shred cheese from the block-o-cheese and spread over the beans to your liking. Cover and store the rest in the fridge.
  4. Lastly, place your salsa and sour cream on top to your liking and roll these bad boys up into tacos.

Eat and enjoy.

Honestly though...this is a cheap meal that everyone loves, so you could even invite over the neighbors at your apartment for a few tacos and margaritas to get to know them. Just a thought!

Just be sure that you turn off the stove.
