You can start one of the first course options, including wagyu beef carpaccio, with pickled shiitake, micro shiso, horseradish and nori wasabi, duck liver country pate, with mushrooms, confit, petit salad, grape tomatoes, and dijon vinaigrette, foie gras au torchon, pan-fried veal sweet breads with porcini risotto, Parmesan emulsion, and ramps, or asparagus and morels, with fried egg, asparagus salad and black truffles.
